Fluffiest Buttermilk Pancakes
Sometimes happiness is found in the simplest things – like a steaming, hot stack of pancakes! These are truly the most incredible pancakes. Even though we are empty-nesters now, my college-aged son frequently requests these when he visits. We enjoy them with peanut butter and hot maple syrup, but any toppings you choose will be great!
Buttermilk Pancakes
They are incredibly fluffy and a tried and true recipe in my house. You really can't go wrong with this recipe. Any toppings from butter and maple syrup to fresh fruit and whipped cream are fantastic on these.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 1/4 cup butter, melted and cooled
- 1 tsp pure vanilla extract
- 1 large egg
Instructions
- Heat a nonstick pan or griddle over medium-low heat while preparing batter.
- Combine dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a large bowl. Gently fold in wet ingredients (buttermilk, melted butter, vanilla, and egg) using a wire whisk. Don't over-mix, a few lumps are fine.
- Lightly grease the pan or griddle with butter or cooking spray. Pour 1/3 cup of the batter into a round shape.
- Cook for approximately 3 minutes or until bubbles form in the batter. Flip and cook another 2-3 minutes until golden brown.
- Repeat step 4 with the remaining batter. Serve with toppings of choice.
